New publication: “Nature in the Glass” in Applied Geography

Wine is often presented and perceived as a natural product; however, it is actually a highly industrialised, processed product. This ‘conventional’ approach has been criticised primarily because of its ecological impact. In response, a niche market has developed for naturalwine - wine that is characterised by environmentally conscious production methods during cultivation and ageing, which help to create a distinctive product.

In this article, the authors Marc Daferner (Katholische Universität Eichstätt-Ingolstadt), Robert Pütz (Goethe-Universität Frankfurt), Christian Steiner (Katholische Universität Eichstätt-Ingolstadt) and Gerhard Rainer (Universität Passau) propose a conceptual framework to explore the practices and basic principles of naturalwine production. The observed processes and winemakers' attitudes reflect an approach of “co-production with nature”, which the authors explore by adopting conceptual ideas from more-than-human geography.
